Green Beans Bhaji/Sabji With Onions And Tomatoes
Sem Aur Tomato Sabji/Bhaji
This is a simple, easy but tasty way to cook fresh green beans. Serve with Plain Parathas or as part of an Indian meal. It is a mild dish and suitable for children.
Serves 2-4
Ingredients
- 250 gm. green beans of any type
- 1 average sized onion
- 1 medium sized tomato
- 2 tsp. cooking oil of choice
- 1/2 tsp. black mustard seeds
- 8-10 curry leaves (not bay leaves)
- 1 level tsp. coriander powder
- 1/2 tsp. turmeric powder (you can use grated root of fresh turmeric instead)
- Salt to taste
Instructions
- Top and tail and then slice beans into 2-3 inch long pieces.
- Peel and slice the onion thinly.
- Slice the tomato thinly.
- Heat oil in a wok/karahi and add mustard seeds. Cover for a few seconds while the splutter, otherwise they will jump all over your stove.
- Add curry leaves, stir and then add sliced onions.
- Stir fry on medium until onions are softened, not browned.
- Add beans, tomatoes, turmeric, ground coriander and salt. You can add chillies to taste here, I don’t. Stir them in.
- Cook covered on low medium heat for 10minutes or so. They should not become soggy, slight crunch is tasty.
- Serve with Plain Parathas
