making achaar

I would like to know if i don't want to use any artificial preservatives what can I use instead for mango,lemon,chilli and carrot achaar.

Please advice.

I have never used any preservatives for making achar. The oil, salt, and sun do the trick. I have never known anyone to use preservatives in 'home pickling'. They are only used by commercial picklers, who work with large amounts fast and have no time to let them 'ripen them in the sun.
