Most of the savoury Indian dishes on the site should be fine for you, though if you need to be really strict, perhaps avoid any with fruit in them, that might include sweet tomatoes.

When mum gets back online, I'm sure she'll be able to contribute more ideas.

We can pass on general advice about reducing sugar in one's cooking, but would not feel comfortable giving specific detailed advice about recommended daily intakes of any individual ingredient.

If you want to measure for yourself an instrument called a sugar refractometer is the tool you need.

Off the top of my head, I can't think of many savoury dishes that I add sugar to in my cooking, so all should be suitable for diabetics, if one adapts it to the advice/instructions one has received from their specialist. Diabetes should not generally mean deprivation these days, just being sensible.

I tend to cook for us with very little oil and eat less and less salt. On a recent trip to Brazil, where everything we ate was lovely but too salty, made me realise how little salt I add to my everyday food now! Indians, like people in many other hot countries like Brazil, eat a lot of salt, sometimes too much. In my view, it is worth reducing it gradually, as your taste adjusts.

Personally, I eat/cook more of green/other coloured vegetables than root ones. We do have roast sweet-potatoes/jacket potatoes sometimes, but not chips. I also eat a fair amount of fish, having stopped eating meat/poultry 10-12 years ago (not for diabetes).

For anyone needing help, the exact or advised amount of what you should/shouldn't eat for a given medical condition should be checked with the person treating you. Diabetes UK website also has good advice about foods suitable for diabetics.
